The idea to cultivate these extraordinary mushrooms in Austria came to the Edlinger family during a trip to Asia. However, the endeavor to market a mushroom variety previously unknown in Austria proved to be anything but simple. In the early years, they sought professional assistance from Japan, until they attempted it on their own. Since cultivating King Oyster mushrooms is a science in its own right, they later sought and successfully obtained support from South Korea. Sung-Kyund Lee arrived in 2010 to stay and has since quintupled the annual production over the last fourteen years. Since then, he has served as the Managing Director at Marchfelder Organic Gourmet Mushrooms.
At the organic mushroom farm in Raasdorf, the knowledge of ancient Asian mushroom traditions meets the high organic standards of Austria, combined with individual customer service. Thus, the premium organic King Oyster mushrooms benefit from the best of both worlds. The Marchfelder organic King Oyster mushrooms are cultivated in three buildings with a total of fourteen cultivation rooms. In addition, there are two buildings for incubation and various spaces for bottle filling, laboratory work, and other uses. The multi-stage mushroom culture is partially conducted in cleanroom halls. To guarantee consistently high quality, everything from the production of the mushroom spores, mixing and inoculation of the substrates, to the actual cultivation, harvesting, and packaging is handled on-site and manually.
